Does anyone here listen to it? I have become very interested recently (maybe I'm getting old) but does anyone know of some good Piano-only music to listen to in the background?
I'm not sure I'm overly interested in the proper "Classical" piano music, but all advise is welcome.
I have the Piano-version of the Final Fantasy X & XII soundtracks which are excellently melodic.
Anything similar out there?

Try some of Philip Glass' piano pieces. Very good.
Spotify comes in really useful for this kind of thing, sampling music for free.

you can listen to Muse's new album :p I understand it's very classic-influenced. And I listened to one of the 2 songs released so far, United States of Eurasia+Collateral Damage and it's really cool (http://www.youtube.com/watch?v=6rWb43KbRD0)! It's true, it's not just piano, but I'll come up with some other (non-Muse) stuff when I get a bit of time to re-search some of the piano clips I heard in the past (there were for example some great Sweet Child O'Mine etc piano covers)

and obviously you should also check Beethoven (my fave is Fur Elise, but he's got loads that are maginificent)

The Goldberg Variations by Glenn Gould is supposed to be the best piano playing going. It's bach though so might not be your kind of thing.
You could try Mrs Mills or Chas and dave if you fancy a good old cockney knees up.
Apart from being absolutely fucking brilliant Howling Wolf usually had some good piano backing him.

if yer into jazz... theres a very lovely album by chick corea called 'my spanish heart' ... just sublime music... stanley clarke plays acoustic upright bass on this album too... just top stuff...
there's loads of jazz piano music that's 'mmmm niiiice'...;)

I know you're not too interested in classical pieces, but the Chopin Nocturnes are too fantastic to miss.
I do like the Romantic composers, so some Beethoven, Rachmaninov and Tchaikovsky will do the job when I'm looking for something a bit more dramatic.

I'd like to recommend some Bach specifically Cantata 208 (Sheep may safely graze)
First heard it in a computer game called Attack of the Mutant Camels for the C64 and loved it since.
